Siberian garlic has one of the highest allicin contents compared to other garlic varieties. Allicin is the biologically active component of garlic which is antimicrobial and may have health benefits. When cooked, Siberian garlic has a creamy texture with a sweet, mild aftertaste. If you're looking for a garlic to ferment in honey, this is the perfect choice.
