Daikon, also known as white radish, is a mild root vegetable used frequently in Asian dishes. When sauteed or baked, Daikon takes on a sweet flavor similar to carrot. Shred and use raw in salad, stir fry, or add to your soups. We harvest our Daikon relatively young at about 12-18" as they can become woody when allowed to grow larger. Daikon is a versitile vegetable high in Vitamin C, phosphorus, and potassium and are known to aid in digestion.
